I got a request from [livejournal.com profile] teilani for cookie recipes. Since we're rapidly approaching Christmas, when I make all these, I figured I'd post them here for everyone. Some of these will be at the Baronial Polling.

Peanut Butter Cookies
  • 2½ cups flour
  • 1½ tsp. baking soda
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ½ cup margarine
  • 1½ cup peanut butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs, well beaten
  1. Sift flour, baking soda, baking powder and salt.
  2. Cream margarine and peanut butter, gradually add the sugars and cream thoroughly.
  3. Add the well beaten eggs.
  4. Combine dry ingredients and creamed mixture.
  5. Form into balls, place onto greased cookie pan and press with a floured fork.
  6. Bake at 375° degrees for 9 minutes.

Rice Krispies™ Crack Squares

This recipe filled a large cookie sheet and made about 4 dozen squares. You're addicted if you can say "They have Rice Krispies™ in them - those are healthy" without giggling.
  • 4 Mars™ bars
  • 4 Macintosh Toffee™ bars
  • 1 cup butter
  • Rice Krispies™
  1. Melt candy bars and butter into a goopy mass.
  2. Add Rice Krispies™ until the mixture seems saturated.
  3. Press into a cookie sheet, cool and cut into squares.
  4. Cover with melted chocolate or icing to really add insult to injury.

Chocolate drops
  • ½ cup butter
  • 1 cup white sugar
  • ½ scant cup milk
  • ½ cup cocoa
  • 3 cups oatmeal
  • ½ to 1 cup chopped walnuts
  1. Combine butter, sugar & milk in saucepan.
  2. Bring to a boil and simmer for 3-5 minutes.
  3. Add vanilla.
  4. Combine oatmeal, cocoa & walnuts, add boiled mixture, mix well.
  5. Drop by spoonful on wax paper.
  6. Let cool in freezer.

Sweethearts

These are my favorites of all the recipes on this page. They always remind me of my Mom.
  • 1 scant cup butter
  • 1 cup brown sugar
  • 2 cups flour
  • 2 egg yolks
  • 1 tsp. vanilla
  • ½ tsp baking powder
  • ½ tsp baking soda
Make into balls, dip in egg whites, roll in coconut or chopped nuts. Bake in 325° oven for 10-12 minutes.


James' Improved Peanut Butter Squares
  • 1 cup butter or margaine
  • 2 cups Peanut butter
  • 2 packages (350 g each) Butterscotch chips
  • 2 packages (350 g each) Reese's Peanut Butter chips
  • 1 package (40 g) mini marshmellows
Melt ingredients (butter first, so it doesnt leave unmelted butter lumps), stir in marshmellows, press into pan and let cool.

Your peanut butter squares recipe is identical to the one my Mom gave me 2 years ago.. It's my absolute favourite, even if it DOES screw with my blood sugars so much!! *sigh*.. being a diabetic sucks!!!
